Product Information

Isomalt (also called palatinitol) is a sugar replacer derived exclusively from surose. It is manufactured in a two-stage process:first,sucrose is enzymatically transformed into isomaltulose.Second, the isomaltulose is hydrogenated to produce isomalt. In fact, isomalt is composed of 6-O-alpha-D-glucopyranosido-D-sorbitol (1,6-GPS) and 1-O-alpha-D-glucopyranosido-D-manitol dihydrate(1,1-GPM-dihydrate).
Therefore, isomalt, which contains 5% water of crystallisatain, is an odorless, white crystalline substance. It is available in a wide range of variants and particle size-from granulate to powder-to suit any application. The sweetness of isomalt is about half of sucrose. Its speciality,physiological function and edible safety has proved by experiments. And it was regarded as safe(GRAS) food ingredient by american FAD.

Applications

As an excellent replacer of sugar, isomalt is applied in a broad range such as candies, drink, chocolate, chewing gum, baked food, ice-cream, biscuit, pharmaceutical products for it has many advantages.
First, isomalt is suitable for diabetics. Compared to eating sugar or glucose, consuming isomalt causes slight increasing in blood glucose and insulin levels because isomalt is one of low digestible carbohydrates metabolizes very slowly in the body and mainly fermented in the colon.
Second, isomalt is gentle on teeth and helps prevent cavities and plaque. Most micro-organisms including S.mutans(which is believed the main organisms causing tooth decay) are unable to feed on isomalt.And so cannot convert isomalt into acids and polyglucose.
Third, isomalt is a good growth factor of bifidobacteria. Though isomalt can¡¯t be used by the enzyme system of human body and most microorganisms, bifidobacteria in colon can use isomalt as a good nutriment and grow quickly.
Fourth, isomalt has low caloric value. It has half as many caloric as sugar because it can not be completely metabolized. So isomalt is very suitable for overweigh people, helping them to stick to a slimming diet.
Fifth, isomalt tastes just as natural as sugar, you can combine it as sugar. You can combine it with intense sweeteners to achieve any desired sweetness profile and mask the unpleasant taste of intense sweeteners.
Sixth, isomalt is very stable. As a polyol, it can not perform any chemical reaction with any other ingredients in food, such as Maillard reaction with amino acid.
Seventh, isomalt do not cause intestinal discomfort even consumed 50g per day.
Eighth, isomalt has very low hygroscopicity. Under the condition of 25¡æ and 70% relative humidity, isomalt hardly absords any water vapor. Because isomalt has excellent resistance to high relative humidity and heat, products made with it are highly stable when stored. Hard candies containing isomalt do not stick together, and can therefore be packed loosely in boxes. Isomalt¡¯s unique nutritional and physiological benefits make it ideal for use in sugar free, low-caloric and diabetic products. It lends itself to both food and pharmaceutical applications, and will offer many convincing advantages for consumers.
